Easy Instant Pot Beef Stew

I bought my Instant Pot last year around this time and was skeptical, as I usually am of the latest fads. But it has turned out to be a great investment, I’m amazed at how fast things cook and how great soups and stews that used to simmer for hours in a slow cooker taste!

We got an unexpected snow last night, and the temperature was about 13 degrees when I woke up this morning, so I decided to make a quick beef stew in my Instant Pot before heading off to work.

I’ve made this recipe a couple times now and it really hits the spot on a cold, wintry day like today.

Here’s what you’ll need:

2 pounds beef stew meat
1 teaspoon Salt
1 teaspoon pepper
6 oz can tomato paste
32 oz beef broth
2 cups baby carrots carrots
4-5 small red potatoes, cut into pieces
1 cups frozen peas
1 pkg. Beef Stew seasoning mix
1/4 cup flour

Directions:

Set your Instant Pot to saute and brown your stew meat. Season with salt and pepper.

Next, add all the remaining ingredients except peas and flour.

Make sure your Instant Pot valve is set to sealing. Then select the meat/stew function. It will take a few minutes for the Instant Pot to get up to pressure and once it does, it will cook for about 10 minutes.

When the cook time is finished, let the pot depressurize for 12 minutes. If you do a quick release, beef stew liquid will spray all over the place!

Then, stir in the peas and flour. Cook on warm for another 5 minutes.

Serve and enjoy!
